Darling & Co unveils a fresh new look

Brisbane’s discerning diners and drinkers will experience a seismic shift in excellence from Good Friday (25 March), with Darling & Co unveiling their much anticipated newlook bar and autumn inspired menu.

After winning over Paddington with their sophisticated establishment, sustainable dining offerings and spirited drinks list, Darling & Co briefly closed its doors last month to undergo the second stage of design manifestations.

“Delivering our vision in stages has allowed us to observe how the space works in reality, and means we can successfully match our distinctive concept with the experience our patrons want,” co-owner and operator Jacqueline Madden said.

In just a few short weeks Darling & Co, under the genius guidance of Angus Munro from Marc & Co, has completely redesigned the space, linking the style and chic comfort of the restaurant with the glamorous feature bar.

“I am so excited to share the reality of what we’ve been planning. I’m not going to say much more, except to promise – you’re going to say WOW when you walk through the front door,” Jacqueline said.

The stunning new bar is almost unrecognizable from its previous look, allowing more room for seating, while the cavernous space has been filled with stylish wooden bar tables, divided by timber framing and hanging plants which open up into a vibrant high ceiling. Blending contemporary finishes with retro elements in a nod to the building’s iconic history, the new bar is warm and inviting, transitioning seamlessly to the restaurant adjacent.

To add to the reasons to celebrate Easter at Darling & Co, Head Chef Guilano Melluso of London’s Michelin-starred Kitchen W8 pedigree will also release his lovingly crafted autumn restaurant and bar menu this Friday.

The restaurant menu makes heroes out of local producers and has a strong focus on new and unique food creations, featuring dishes such as the butternut pumpkin gnocchi with goats curd, mascarpone and sage, Darling & Co’s signature 12-hour slow cooked lamb shoulder with seasonal vegetables to share, and Cone Bay barramundi, Diamond Bay clams, peas and fennel.
