Neil Perry’s Rosetta to open in Sydney

Celebrity chef Neil Perry is an old hand at opening restaurants.

But his latest, a Sydney spin-off of Melbourne's Rosetta Ristorante, is likely to get lots of attention.

It will open in Grosvenor Place on Harrington Street next Tuesday on August 15.

The dining and bar setting will be set across three levels, the most popular spot likely to be the ground floor outdoor terrace, offering Sydney-siders the kind of Italian food they could previously only find in Melbourne.

Above the ground floor terrace, there will be a bar, and up again, a mezzanine dining space with room for 50 people.

The difference is there will be all-day dining and snacking with harbour views – and that’s something you can’t get in Melbourne.

The Sydney Ristorante menu will also much more seafood than what’s on offer in Melbourne. Expect dishes like the spaghetti alla chitarra with prawns and pistachio, yellowfin tuna with salsa verde and fish soup.

The aim is to source it locally with produce coming from sustainable suppliers including Marine Stewardship Certified yellowfin tuna and King George Whiting, John Dory and squid from Corner Inlet, Victoria.

The milk-fed veal will come from southern New South Wales.

And the dolci, including cassata, cannoli, panna cotta and Torta Verona will be house made.

In keeping with Italian roots, the bread and pasta will be made in-house every day.

Of course, there will be a mozzarella bar and pizza.

At the bar, which accommodate there will be over 30 gins, with five types of Negronis, herald bellinis and  Italian wine.

Perry, the Rockpool Dining Group culinary and brands director, said the aim was to bring sophisticated Italian dining to Sydney.
