Palazzo Versace’s new restaurant to offer Indian-Asian fusion in a relaxed setting

The Palazzo Versace on the Gold Coast is gearing up to launch its latest “causal” fine dining concept Kokum.

Head chef Sabir Merchant and venue manager Daniel Carne will oversee the Indian-Asian fusion restaurant, which is set to “be a little unique”.

“Kokum is a very unique concept, and the cooking techniques and flavours will be something you cannot find in all of Australia,” Merchant told the Gold Coast Bulletin.

The menus will include Tandoori-oven cooked sambal barramundi with caviar and eight-hour slow cooked lamb flambe featuring Kashmir spices.

“The whole menu is really amazing,” Merchant said. “We give each other a little bit of information about Australian cuisine, he gives me more information about his recipes and Asian and Indian ingredients.

“Chef Manju (Mural) understands that very well, he’s very good at mixing traditional and unconventional.”

Carne describes the dining area as a “not too formal” space offering a “very relaxing experience”.

Kokum will open on November 16.
