Culinary team comes together at Howard Smith Wharves

Fresh from hosting its inaugural event in its Rivershed venue, Brisbane’s latest dining and accommodation precinct Howard Smith Wharves has finalised their culinary team.

The line-up of talent includes culinary director David Finlayson, who will oversee the food and beverage offerings for Felons Brewing Co., Mr Percival’s and Howard’s Hall and Rivershed events, along with a yet to be announced restaurant. He was previously the operations manager behind Melbourne’s iconic Chin Chin and Kisume

“Being able to train chefs across a precinct like Howard Smith Wharves is a very rare opportunity and I think it will attract some of the best trainees and apprentices from all over Australia,” he said.

Patrick Friesen has taken on the role of executive chef of Howard Smith Wharves, after running Queen Chow in Sydney since 2016, and Papi Chulo (now known as Queen Chow Manly) since 2013.

Damien Styles is the head chef of Mr Percival’s, the overwater bar at Howard Smith Wharves. He has spent the last two years working at The Fish House in Burleigh Heads, which received two consecutive hats under his helm.

Bringing 19 years of experience to his role as executive chef for events is Steven Forrester. His previous role was executive sous chef of The Star Gold Coast, overseeing the operations of the property’s seven restaurants.

After spending four years abroad working in Samoa, Fiji and Vanuatu, Michael Hardy has returned to take on the role of head chef at Felons Brewing Co.

Howard Smith Wharves has also announced that the $60 million 166-room hotel being constructed under the Story Bridge will be the flagship hotel for Art Series Hotels when it opens in March 2019.
