Townsville RSL restaurant officially recognised as one of the best in Australia

Townsville RSL’s restaurant Lavarack has won the state category at the Restaurant and Catering Awards for Excellence in addition to being named second best in Australia for best restaurant in a pub/club/tavern.

Hospitality veteran Patrick Senent has been head chef at the Townsville RSL for almost 18 years and he and his team have won numerous awards in that time.

“This is not about me, it’s about the team,” he told the Townsville Bulletin.

“I can give directions, ­create menus and recipes, but if one member of my team doesn’t perform it’s gone.”

The two restaurants at the RSL have a kitchen team of 18 working under Senent.

“It’s a reward to all staff ­involved for their dedication and professionalism, day in, day out,” he said. “There is no better feeling when we go home at night knowing that we have achieved the thing that counts so much to us and that is creating a memorable experience for all our members and guests.”

The most popular dish on the menu is slow cooked rolled lamb shoulder with anchovies, which has only been off the menu once briefly.

“It’s comfort food at a bit of a higher level,” he said.
