Rose Bay Hotel returns with a new look
The Rose Bay Hotel in Sydney has reopened today after an extensive refurbishment.
The three-storey Victorian red brick building was known for having a classic model train that made its way around an overhead track in the front bar every hour.
General manager Toby Chick said the renovation has been a “long time coming”.
The food offering has also been revamped under new executive chef Ian Royle (ex-Flying Fish and Catalina), with a new 70-seat restaurant falling between fine ding and a regular pub offering.
“We’re trying to change our approach, to being a multi-faceted venue,” said Royle.
“You can see it in our wine list and food offering, where our entry-level pricing is very reasonable, then it goes up to quite premium.”
