Champagne bar named as third venue for $22m Melbourne dining precinct

The Speakeasy Group, behind cocktail bars Eau de Vie, Mjolner and Boilermaker House, will open the third venue in Melbourne’s new 80 Collins development spearheaded by Chris Lucas, Martin Benn, and Vicki Wild.

The Group will open cocktail and champagne bar Nick and Nora inside the 47-storey hotel, office, retail and dining precinct, joining Alejandro Saravia’s farm-to-table concept.

Spanning one floor with three balconies and five event spaces, the bar is designed to emulate Art Deco glamour with old-world service and classic, lavish drinks.

The snack-focussed menu will stick to oysters, caviars, cheese and charcuterie, while at the bar the menu will be divided into themed lists: Femme Fatale for Martinis, Hollywood Starlet for champagne cocktails and The Snitch for sours.

A 5m climate-controlled display will hold the champagne collection, with over 400 bottles, including rare and hard-to-find vintages.

The $22 million precinct is slated to open in 2020.
