Australia’s first vegan degustation-only restaurant to open in Noosa

Noosa is set to welcome Australia’s first vegan degustation-only restaurant helmed by ex-Urbane chef Alejandro.

Named after the Ancient Greek word for plant, Phyto will be the signature venue of Noosa’s new Parkridge residential development.

Speaking to The Courier-Mail, Cancino said he felt “it could be a huge opportunity to do something that no one is doing”.

“For me it’s a new path and a new exploration,” he said. “I’m super excited and super happy for the whole experience.”

The chef whose experience includes stints at former world No. 1 restaurants Mugaritz and El Bulli, both in Spain, is currently working on the fit-out, with the space to have 16-18 seats, with six at a bar.

For the menu, he will get inspiration from travels later this year to his homeland of Argentina, Asia and Australia. The matching drinks menu will include vegan and organic wines as well as non-alcoholic options, such as roasted cereal teas and iced teas that aren’t overly sweet.

The degustation restaurant will only open three nights a week.
