Salt Meats Cheese opens rooftop bar in Circular Quay

Salt Meats Cheese has opened its first bar in a sensational new rooftop setting far above the beating heart of Circular Quay.An entirely new direction and unique brand for the growing hospitality group, Bar Ombré is a breath of fresh air designed for Sydney sunset bliss and offers a laid-back, intimate bar experience for city dwellers and those travelling from afar. 

The Bar Ombré menu celebrates simple flavours with daily stretched cheese, cured meats and fresh Ligurian-style home-made pesto. Guests can start off with the Ombré Antipasto of burrata, salumi, semi-hard cheese, and pickles, alongside wood baked focaccia with extravergine, followed by plates of fried calamari with crumbed zucchini, pickled chilli and aioli; San Daniele prosciutto and burrata with grilled eggplant, basil and rocket pesto; or marinated white anchovies with fresh tomato, herbs and breadcrumbs. 

The drinks list is naturally at the heart of the Bar Ombré experience, complementing the style of food and rooftop setting. Fresh, simple and well-executed, it is full of classic and bespoke European cocktails and spritz – such as the pear and maple old fashioned, the ‘Forget Me Not’ with Beefeater gin, lychee liqueur, St Germain, lime juice, egg whites and plum bitters, a vanilla and grapefruit barrel-aged Negroni, the ‘Smokin’ Nights with Averna Amaro, mezcal, Angostura bitters, vanilla syrup, cream and cinnamon. Italian wines are served alongside new world drops with a focus on biodynamic, organic and vegan wines.

The launch of Bar Ombré follows what has been an exciting period of growth for Salt Meats Cheese. Since launching in 2012, four years after childhood friends Edoardo Perlo and Stefano de Blasi moved to Sydney from Northern Italy, the group has expanded to include nine concepts across Sydney and Brisbane including the recently opened restaurant in Brisbane’s Mantra South Bank, and another soon to open in Woolloongabba.
