Dan Hong to reopen Lotus in Potts Point

Chef Dan Hong is returning to the venue where he made his start with the Merivale Group 11 years ago.

This spring, Hong will lead the kitchen at Lotus in Sydney's Potts Point, which is temporarily reopening for about 12 months in its original location on Challis Avenue.

The three-storey venue is currently occupied by The Fish Shop, which will close in mid-June.

Merivale has sold the building with a caveat that it could trade for another year.

“Justin Hemmes called and said ‘let's go out with a bang. What do you think about doing Lotus again for another year?’," said Hong.

Hong began his career at Merivale in 2008, aged just 24. His modern take on East meets West dining was an instant hit with patrons who went wild for his hot fudge sundae in particular.

While the sundae is returning to the menu, Hong is creating new dishes for today’s dining scene.

The kitchen will have just a four-person team, compared to the 40-strong team at Hong’s Cantonese restaurant Mr Wong.

Lotus is expected to re-open in September.
