Chef Alessandro Pavoni sells Sydney restaurant Sotto Sopra

Italian chef Alessandro Pavoni has sold his hatted Newport restaurant business Sotto Sopra, with his last service on July 1. 

New owners Doug Fraser and his wife Kylie will open it as a modern Australian brasserie called Lovat. Fraser was behind Suburbia in Manly and Barbuto in Narrabeen. 

"Barbuto was my favourite place up here when they were there, I'm going to be their best customer,” said Pavoni, who operates Ormeggio at the Spit

“I own the building (Sotto Sopra), so it was really important to find the right people to take over."

Sotto Sopra’s head chef Mattia Rossi and his wife, pastry chef Flavia, were looking to step away from the restaurant with a baby on the way. 

Pavoni is believed to be a front runner to open a restaurant at James Packer's Barangaroo development.
