Long Chim in Melbourne to make way for Ging Thai

Chef David Thompson’s acclaimed Thai restaurant Long Chim has closed its Melbourne iteration to make way for Ging Thai helmed by local Thai chef On Saengyojanr.

Thompson’s casual Thai diner was located at Melbourne’s Crown complex.

“It is true that after two and a half years Crown and David Thompson’s Long Chim have agreed to part ways,” Thompson said in a statement. “Each party wishes the other every success in their respective ventures.”

With more than 30 years of kitchen experience, Ging Thai chef Saengyojanr said her menu will be “about going back to basics and doing them well, using the best ingredients we can source”.

“Thai food is in my blood,” she said. “I grew up watching and learning from my grandmother and my mother. Ging Thai is about true Thai food – the smells, the tastes – but with a modern twist to it with certain ingredients and the look. I am so excited to bring to life my take on Thai.”

Ging Thai will open on July 12. The Melbourne closure will have no effect on the Perth and Sydney outposts of Long Chim.
