New faces at Bathers’ Pavilion ahead of reopening
A new line-up of chefs and front of house has joined Bathers’ Pavilion in Balmoral.
Cam Fairbairn (ex-ACME) has been appointed general manager of service; Cameron Johnston (ex-St Claude’s) has taken on the role of head chef; with Kumiko Endo (ex-Attica) joining as pastry chef. The position of Jess Mead (ex-Kingdom of Rice) is the new restaurant manager.
The restaurant has been closed for the past month while it undergoes a series of renovations after operator and chef Serge Dansereau signed a new 20-year lease earlier this year.
Set to get a new kiosk, cafe, restaurant dining room, lounge area and function space, Bathers will open in October.
