Tiny sushi degustation restaurant set to open in Fortitude Valley

A high-end sushi degustation restaurant is gearing up to open in Brisbane’s Fortitude Valley.

Japanese chef Takashi Nami and Esala Roqica are behind the 12-seat venue Shisho that will offer the option of three multi-course menus - a short, medium and long.

Each menu will involve a variety of entrees cooked on a Japanese grill, followed by individual pieces of nigiri sushi using seafood from across Australia, New Zealand and Japan. The desserts have been devised with the help of former Mercado executive pastry chef Adrien Marcinowski.

The drinks menu includes 10 sakes, a tight wine list chosen by a French wine master, as well as Suntory The Premium Malt’s beer on tap.

“I think Brisbane has grown up and so many ­people are now looking for high-end sushi restaurants so it’s a really good time to come in,” Nami told the Courier Mail.

Shisho is due to open in the second week of October.
