Local restaurateur to open café in aged care complex The Royce

Restaurateur Ross Dobson is busy designing the menu for his new venture which is located inside high-end aged care apartments in southwest Sydney.

Speaking to Good Food, Dobson says he was inspired to enter the aged care sector after Shuk opened in the Trebartha retirement apartment complex in Elizabeth Bay.

The Royce has recently opened in Penrith, with Cafe Royce offering high end menu items such as a breakfast orange blossom waffle and sake poached chicken, pork and fennel lasagne and Cuban sandwiches for lunch.

Sydney roaster Little Marionette will provide the coffee while pastries will be made on-site. A dinner service is planned for next year.

Dobson, who grew up in Penrith and currently operates Café at Lewers and The Union Restaurant, says his culinary philosophy is simple.

“Food, and the hospitality associated with sharing the experience is very important to me, it’s a way of life,” he said. “Food makes people happy.”
