Internationally trained Luca Guiotto named head chef at Skycity’s iTL

Internationally trained Luca Guiotto has been named Head Chef at iTL; a destination Italian restaurant in SkyCity’s $330 million expansion, opening this November. 

In July SkyCity revealed details of four new restaurants and two new bars set to reshape the dining landscape in Adelaide, with iTL’s modern Italian kitchen revealed as a venue to embrace contemporary cuisine, featuring two large wood fired pizza ovens, freshly made pasta and a broad selection of starters.

Adjoining the Festival Plaza, iTL will be a high energy attraction for customers on the way to or from the Riverbank Precinct, including the Adelaide Oval and Festival Theatre.

Luca is passionate about bringing a taste of his Italian home to the table at iTL, having previously held the role as Head Chef at one of Sydney’s finest Italian restaurants, A Tavola.

Luca has also helmed Sydney Ovolo 1888 Hotel eatery Mister Percy, where he shaped the venue with his own contemporary cooking style and held popular pasta making classes. Prior to that Luca worked at Catalina Rose Bay, a dining institution in Sydney. 

Luca was a TAA Chef of the Year finalist in 2019.

Luca said: “Italian fare is entwined in Australian culinary culture, and it’s arguably our most embraced cuisine.

“There’s nothing Italians respect more than good produce, and I can’t wait to showcase South Australia’s fresh, seasonal produce in a contemporary, Italian menu.”

SkyCity General Manager of Food and Beverage, Todd Roydhouse, said: “Luca brings extensive experience in hatted restaurants, is a pioneer of modern Italian cuisine, and a champion of Australian produce. 

“Luca’s fire for not just pasta and pizza, but all that his motherland has to offer in fine wine, gelati, coffee and so much more, is part of his charm in establishing iTL.”

Luca recently commenced recruiting for his team, along with the iTL Venue Manager, Giada Sanna.
 
Giada originates from Sardinia’s second-largest city, Sassari. Following study and work in Italy, Giada relocated to Australian where she managed some of the country’s most celebrated establishments.
 
Giada’s wealth of experience in restaurant management includes The Pot in Adelaide, Mt Lofty House in the Adelaide Hills and most recently, the award winning d’Arenberg Cube in McLaren Vale.
