Top chef set to breathe life into Sorrento hospitality scene

The Mornington Peninsula is set to become home to chef Scott Pickett’s new project – his biggest yet.

The project will consist of several new eateries and a bar at a new Euro-style resort and hotel.

Heritage listed Hotel Continental in Sorrento will reopen as a luxe resort this summer, featuring 12 new eateries, including seafood fine dining, a casual restaurant, poolside bar and rooftop bar.

Pickett, and Melbourne publican Craig Shearer, have been charged with creating the food offering at The Continental Sorrento.

The Continental is being designed by consortium Victor Smorgon Group, Kanat Group and Trenerry Property, as a multimillion-dollar precinct.

Mornington Peninsula’s new five-star InterContinental Resort Hotel will also be located on this site and it will be home to Pickett’s seventh restaurant, Audrey’s, which is named after his grandmother.

The restaurant will seat 120 and will be a seafood fine diner.

“She was a big influence and ignited my passion for food,” Pickett said.

“I wanted this to be a wonderful homage to Audrey and capture old-world elegance in a simple setting.”

Under Pickett and Shearer’s guidance and purview will be all-day eatery The Conservatory, streetside public bar The Conti, hotel bar Coppin’s Lounge and snacks at the poolside and rooftop bars.

“I’ve always wanted to do something regionally,” Pickett said.

“It’s a world-class development and will bring back to life an iconic site.”
