Ritz-Carlton Melbourne names Mark Best as culinary advisor

Australian chef Mark Best will join Melbourne's five-star Ritz-Carlton hotel and executive chef Michael Greenlaw, leading the culinary team as culinary advisor.

Best, who closed the Marque six years ago is internationally renowned and with Greenlaw will deliver hyper-local, seasonal and cutting-edge cuisine throughout the hotel.

Greenlaw is the perfect partner with over 15 years in five-star hotels including London's Bibendum, New York's Gilt and Melbourne's Vue de Monde.

"The experience will be all about what is on the plate, and Michael and I just love the fact that you can look out the windows and see where the food on your plate is sourced; from the Macedon Ranges in the west to the Dandenongs to the east, and Port Philip Bay stretching out in front of you," Best said in a statement.

Best is just one of many of Australia’s top chefs to join a prominent hotel: Brent Savage and Nick Hildebrandt of The Bentley Group will be prominent at Capella Sydney's in-house restaurant, Brasserie 1930, which will open in March; plant-based pioneer and Gourmet Traveller's 2022 Restaurant Personality of the YearShannon Martinez will take the position of creative culinary partner at Ovolo Woolloomooloo to rebrand Alibi Bar & Dining. This is slated to open in January next year.

Other appointments include ex-Biota chef James Viles as culinary director at Park Hyatt in The Rocks; chef Rhys Connell will lead the newly reopened The Gantry at Pier One Sydney Harbour and you can find former ACME chef Mitch Orr at Ace Hotel Sydney's rooftop restaurant, Kiln.
