Another addition to Sydney's gourmet hamburger scene

Sydney has already marked its turf as a global dining capital, our next claim to food fame is possession of the world’s most over-qualified burger flippers.

Former fine dining chefs Justin North and Warren Turnbull have both picked up the spatula [at The Burger Shed and Chur Burger respectively], now former Astral and SMH Chef of the Year Sean Connolly is joining them.

Connolly and Fraser Short are opening Parlour Burger later this month in the former site of Parlour Bar, next to The Morrison on George Street in the city. The menu structure sounds Chur Burger-ish, with five burgers at $10 a piece.

But Connolly is playing with some quirky ideas, including his Black Widow – a charcoal brioche bun made with “vegetable carbon”.

A spokeswoman for Parlour Burger says the decision to open was driven by The Morrison, where the burger is the biggest-selling item: 100 of them go a day.

The switch from twin-toqued Assiette restaurant to burger joint is proving to be a successful one for Turnbull.

This weekend he opens his second Chur Burger outlet at The London Hotel in Paddington.

''We're testing the water with a pop-up, but if it goes really well, we'll stay,'' Turnbull says of the expansion.

The chef has had at least 20 serious approaches about expanding the concept.
