Redcape retunes Minskys piano bar

Pub group Redcape has re-worked Sydney venue Minskys to suit the evolving demands of its lower North Shore patrons. 

Located in Cremorne, Minskys was the area’s late-night venue of choice for decades, but has experienced mixed success in recent years as market dynamics have shifted. 

Redcape has undertaken major refurbishments to a number of the venues in its operating portfolio, with a new-look Minskys being relaunched as a “traditional pub experience”.  

The hotel has retained the famous Piano Man – these days residing in the street level public bar, which now features a “fashionable yet refined” theme, with timber, warm colours and leather furniture.

But the menu is the star, offering what chef Robert Oey calls “pub food – done exceptionally well”, whilst being the only licensed venue in the area offering sit-down dining after midnight.  

Redcape chief operating officer Dan Brady told TheShout that the changes are in tune with industry evolution and the long-term connection between pubs and their communities. 

“The Neutral Bay / Cremorne area has become filled with restaurants and small bars,” said Brady. “Unlike small bars, pubs enjoy a longevity and heritage of having generational links to their communities. 

“The challenges over recent years through legislative changes both licensing and planning have presented difficult barriers for hoteliers. With large investments locked into these assets, the reduced flexibility in the legislation has prevented a more timely response as to how and when these facilities have reshaped themselves to better interface with the modern needs of our communities.

“The contemporary flow of change has come about due to the industry coping better with the legislative changes. However, it is important to recognise that whilst the hotel’s facility or facade may have changed, the essence of the connectivity to the community is as strong as it has been throughout the long history of the industry.” 

Officially relaunching in January, Brady said the new look Minskys will be actively integrating with the local community, including a prominent sports sponsorship program.
