THE Australian Hotels Association (WA), Tourism Western Australia and beverage company Lion have searched Western Australia to find the best steak sandwich available at one of WA's great hospitality venues.

Five metropolitan and five regional venue finalists have been selected to compete in the grand final ‘cook-off’, taking place at the AHA's Hospitality Expo 2014 at 2pm on Tuesday and Wednesday May 13 and 14 at Crown Perth.

The regional finalists are Murphy’s Irish Pub, Mandurah, The Bridgetown Hotel, Broken Hill Hotel, Boulder, Matso’s Broome Brewery and Southerly’s Harbour View Bar and Restaurant, Coral Coast.

Roy Thomson, Bridgetown’s entrant, is a force to be reckoned with.

Mr Thomson was born in Africa and trained as a chef in South Africa, and has travelled the world working in many of the famous eateries of a food connoisseur.

“I have my own formula for my steak sandwich,” he said.

“I only use the best quality WA sirloin beef, which is marinated in my own recipe of marinade, after very careful cooking it is combined with sweet and sour onion jam, honey mayonnaise, roasted tomatoes, lettuce and melted cheese in a baguette, then served with rosemary salt dusted wedges.

“There is a very big demand for this steak sandwich, over the blues weekend we can sell over 500 of these babies to appreciative customers - it’s the ‘bread and butter’ of the Bridgetown Hotel,” he said.

This reporter was given the chance to sample one of Chef Thomson’s masterpieces.

The delicious smell of the sandwich is the first thing that hits you as the plate is brought into the room.

The look of the plate was a feast to the eyes with the edge of the steak peeping out from the pocket in the baguette contrasting with the fresh, cool colour of the lettuce and tomatoes.

The wedges, with their golden crisp outside, were soft and delicious to the palette, with just a hint of rosemary, making it essential to try another one.

The first bite into the sandwich, was convincing that this was a winner for the big competition.

The combination of flavours burst on the taste buds, with beef which was soft and succulent, holding the taste of the marinade, complimented by the onion jam and honey mayonnaise and the roast tomatoes.

In all the sandwich could well be the winner when Mr Thomson gets to the Hospitality Expo 2014 at the Crown Perth on May 13, proving once again that we have it all in the little town of Bridgetown.

The live cook-offs are being held at 2pm on the day at Hospitality Expo, Crown Perth.
