New operators include SumoSalad’s Green Label store, Warren Turnbull’s Chur Burger, Vietnamese Roll’d, Chinese Hokka Hokka, Mad Mex, Sahara Grill plus a Red Rooster.

Both Chur Burger and SumoSalad Green Label will be first to airport food offerings in Australia,

The SumoSalad Green Label offering will have a vertical farm to grow fresh herbs and lettuce, plus a cold press juicery and urban beehive.

“We are trying to bring in brands that are first to airports in Australia,” says the airport’s general manager of retail Glyn Williams.

“We are also looking at brands that have never been in Australia before. We’ve just concluded deals with Bath & Body Works out of the United States. We are starting to work as the incubator for great brands from overseas.”

The original SumoSalad also recently announced it will be supplying Jetstar with inflight meals, including chicken basil penne, pumpkin and couscous and a lentil salad.

“There are a whole lots of new offerinmgs and new brands and importantly a lot of it is very much value based and is a lot about freshness and driving that fresh concept.”

The works are part of the wider improvements in food and dining for Sydney Airport’s T2 and T1. Pop-ups will operate in the interim.
