Icebergs is the tip of Sydney’s stylish restaurants

It is one of the most recognisable restaurants in Sydney, with its grand white façade looking out over the crashing waves of Bondi Beach.

And the head chef at Icebergs Dining Room and Bar is under no illusions about how lucky he is to work at such a prestigious venue.

From Monty Koludrovic’s workplace he looks out over one of the oldest ocean view swimming pools in Australia and can see all the happenings on the beach below. Diners can also enjoy this amazing view – one of the most famous in Sydney – from the restaurant and terrace.

Monty explains: “I think what sets Icebergs apart is, one, we have got an amazing location and the second thing is that our mantra is ‘quality is a given’. We really want to bring something which is a quality product to match the view and experience of the dining room.”

Key to providing this quality is sourcing the best local ingredients as they come into season.

“What we’re focusing in on is a snapshot of the quality that is in Australia and especially around the east coast. We get to showcase things that you’re not going to see in your average restaurant,” says Monty.

One such dish is raw kingfish with a special burnt citrus dressing, sardines and kohlrabi, which has become a favourite with customers.

Of course, the fresh produce tastes even better in such glamorous surroundings, making Icebergs a must-see for Sydney visitors.

Monty adds: “Life is full of things that you become accustomed to. But when I walk into that restaurant and you see the view and you’re actually out looking along a curling wave with surfers dipping in and dolphins frolicking, it's just a breathtaking experience, it’s just a very special part of Australia.”
