International chef says perfect burger is 7cm high and made of nine specific layers

WANT to know the secret to making the perfect burger? There is a science to it — but you’d better get out your ruler.

Sensory researcher and international chef Charles Michel believes he has created the ultimate hamburger recipe, composed of nine separate layers and measuring 7cm high.

Mr Michel — who has experience in Michelin-starred restaurants and is now a sensory researcher at Oxford University — said 7cm was the ideal size to allow for plenty of filling without making it too big to eat.

The meat should be a 1cm patty of Wagyu beef, with toppings including a lettuce leaf, a slice of gherkin, a 1cm slice of tomato, two slices of ham, fried onion rings, two pieces of camembert cheese, tomato sauce and two splashes of soy sauce.

The bun must be warm and the whole thing should be served wrapped in paper — never on a plate — before being eaten with your hands.

 

Mr Michel said the recipe offered the ideal balance between salty, sweet, sour and bitter flavours, while stimulating all our senses with a good crunch and appealing smells.

“Taste is just one element,” he said. “The perfectly balanced burger is actually a multi-sensory experience.”

Burger Foundry owner Johnny Yung, whose staff assembled the burger at his St Morris restaurant, said he believed the perfect burger has a combination of bold flavours, fresh ingredients, flame-grilled fillings and homemade sauces.
