Cabana Bar, the Lush New Inner-City Oasis from Tilley & Wills, Launches Just in Time for Summer
Sydney-siders, with the summer season in full swing, those seeking a holiday fling can be sure to find a sweet companion in new inner-city venue Cabana Bar.
Launching in December, Cabana Bar is a resort-style al fresco playground in the heart of new CBD precinct 25 Martin Place. Brought to you by the team behind the award-winning inner-city restaurant precinct, Verandah - part of the multi-award winning hospitality group, Tilley & Wills -
Cabana Bar encompasses two bars, semi-private dining, and the city's largest outdoor terrace spanning over 100m.
Operating on ‘Cabana Time’, the enticing open-air bar and kitchen is open all day, from Monday to Saturday - ready to serve up lunch on the run, a long boozy afternoon wining and dining, or a bevvy of late night cocktails and bar snacks.
Tilley & Wills CEO, Nick Wills, sees the venue as a coveted location for guests to escape the grind, a mini getaway just an arm’s reach from the reality of work.
“We want to excite and impress with first class service, inventive food, wine and cocktail offerings, and a luxe resort fit out, to create memorable experiences. Above all, we want it to be fun and playful, and a place where you can escape reality, in a time no more relevant than right now”, said Wills.
The venue blurs the boundaries between formal drinking and dining in a luxe neo-colonial oasis anchored beneath an intricately patterned rattan ceiling. Wander through the arched turns and doorways to explore all the pastel embellishments the site has to offer. Spanning 5 stylish
function spaces, Cabana Bar is destined to delight. Grab a drink at Palm Bar, before sipping on colourful cocktails at the plush Aruba Booths. When you’re ready, explore The Cove, moving around to Kokomo Corner and the Cape, before finding refuge at a memorable spot with
sweeping views of the sparkling city.
The interior, designed by Luchetti Krelle, award-winning Sydney architecture firm, strikes the perfect balance between poised and playful, cheeky and classy. The open-plan bar features an al fresco terrace with a mix of impressive indoor and outdoor spaces nestled within a chic
curved design. Deep pacific-blue leather banquettes and sand-hued timber furnishings engulf the venue, drawing influence from South-America. Wrapped in a veil of greenery above the rooftops of Martin Place, the spacious loft offers a breezy getaway from the concrete jungle
below.
Tilley & Wills Group Executive Chef Brad Sloane (NSW Australian Hotels 2013 Association Chef of the Year), has designed a fresh and delicious menu that experiments with the best of Australian seasonal ingredients. His food philosophy rests on the beauty and simplicity of great
classic food, translating into Cabana Bar’s simple, yet refined dishes, which complement the extensive drinks and cocktail list. The venue treads a fine line between a pub, restaurant and bar, showcasing staples such as a Classic Cheeseburger or Herb-Crumbed Chicken Schnitzel.
For something a little more exciting, guests can feast on creative classics such as the Southern Prime Sirloin, snack on moreish Marinated Olives and zesty Tequila Cured Salmon, or whisk their taste buds to South America with Cabana’s feisty tacos. The menu also offers a selection of share-plates designed for group nights out - think Seasonal Oysters and Cheese boards dotted with fruit paste, chutney grapes and finished with crispy lavosh.
Come for the food, stay for the bevvies - party-people can drink their troubles away with Cabana Bar’s exotic cocktail collection. Guarantee yourself a hot night out with a Coco Cabana-Rita, an aromatic mix of 1800 Coconut Tequila, Joseph Catron Coconut and lime, then cool it down with a Cabana Tai’m - a house mai tai of Pampero Blanco rum, Cointreau, lime, pineapple, orange and bitters. Tropical vibes are aplenty with a classic Piña Colada or Margarita, and those looking to sip and share can grab a few festive fish-bowls for the table.
The rotating wine-list is carefully curated by restaurant manager and self-confessed wine snob Katie Murphy. With over 12 years at Tilley & Wills and experience in NYC under her belt, her skills have delivered a fine wine selection that showcases select reds, whites and champagnes so guests can enjoy a top-end wine without having to crack a bottle. Whether the situation calls for a glass or two, patrons can enjoy a premium wine without needing to order an entire bottle, perfect for lunch dates or work lunches.
Cabana bar will also be Sydney’s go-to events destination, accommodating groups of 20-500.
Under the direction of Saskia Eichler, who has built a strong network of corporate relationship from being in the events industry for over 18 years, Cabana Bar will transform into an abode of electrifying, one-off events, perfect for those seeking a little more excitement for summer.

Cabana Bar is open and licensed Monday to Thursday from 11am until midnight, and 11am to 2am on Fridays and Saturdays.
