Looking for the perfect latte? Yelp names Sydney’s 20 best cafes, see which coffee spots made the cut
THERE is no doubt Sydney has the best coffee in Australia, but Yelp users have picked the cream of the crop after announcing the city’s 20 best latte spots.

Hemingway’s head barista Alex Wearne at work after the cafe was named in Yelp’s top 20 latte spots in Sydney.
From Manly restaurant Hemingway’s to renowned cafes like Single Origin Roasters in Surry Hills, a terrific latte is never too far away for Sydney’s avid coffee hunters.
But the volume of coffees a day hasn’t diluted the quality at Hemingway’s, with the beachfront baristas pumping out as many as 600 cups a day,
Head barista Alex Wearne said the secret to a good latte was precision and timing.
“You need to add milk to the espresso shot within 24 seconds of extraction,” he said.

Single Origin Roasters in Surry Hills topped Yelp’s list for latte in Sydney.
Making a latte begins with great coffee. Hemingway’s uses Gabriel’s Monte Carlo blend for its “hint of cacao”, Mr Wearne said.
“Each latte is made with cold milk heated to 68 degrees, any hotter and the sugars in the milk burn,” he said.
“Full cream milk gives the best flavour, although skimmed milk has more sugar and is creamier when aerated.”

Mr Wearne is a latte fan, sipping his caffeine as a double shot piccolo that’s flavoured with honey.
A passionate coffee maker, 20-year-old Mr Wearne has been making coffee since he was 14. He is also honing his latte art, progressing from tulips and rosettas to bears and zebras.
Caleb Cha is his inspiration. Cha took out top honours at the World Latte Art Championship in Sweden on June 18.
