Delicious and Easy Warm Lamb Salad

Warm Lamb Salad
Serves 4 | Prep time 5 minutes | Cooking time 30 minutes
Ingredients
- 600g pumpkin, cut into wedges
- 1 red onion, finely sliced
- 2 tablespoon olive oil
- 1 bunch asparagus, cup into 3cm pieces
- 1 tablespoon ZoOSh Balsamic Vinegar
- 600g lamb backstrap
- 60g rocket leaves
- 30g Dairymont parmesan shredded
- Parsley to garnish
Method
- Preheat oven to 200°C.
- Combine the pumpkin and onion with 1 tablespoon of olive oil and spread over a baking tray. Bake for 20 minutes. Add the asparagus and cook for a further 10 minutes.
- Heat a griddle pan to hot. Brush the lamb with 1 tablespoon of olive oil and cook lamb over high heat for 3 minutes on each side. Remove from the pan, cover with foil and rest for 5 minutes.
- Toss the warm pumpkin, onion and asparagus with balsamic vinegar.
- Thinly slice the lamb and add to the pumpkin. Add the rocket and parmesan and toss to combine. Transfer to serving bowls and garnish with parsley and extra parmesan.
