Icebergs to launch iconic brand at Sydney airport

Icebergs Dining Room and Bar is opening a spin-off venue at Sydney Airport. Launch date is expected to be mid-2025 at terminal 3.

This is the Bondi restaurant’s first licence agreement and is in collaboration with food and beverage operator Airport Retail Enterprises.

In some ways it’s even more beautiful [than Bondi],” Icebergs owner Maurice Terzini told Good Food. “The brief was to capture the Icebergs DNA. It’s really elegant and picks up on the same colours.”

The airport venue is being crafted by Rome-based architect Carl Pickering, who is behind the iconic Bondi venue.

Icebergs is English TV food presenter Nigella Lawson’s favourite restaurant in the world.

Terzini said the airport version will cater to different traffic. While it will still have the expected level of detail and attention to food, drinks and service, it will also have a heavy emphasis on the coffee and Italian breakfast offering at Icebergs Bar + Kitchen.

The change emphasis is designed to cater to people on the move.

Grab-and-go items will also be on the menu with a range of pastries and tie-ins with outside bakeries.

Icebergs is the latest addition to Sydney Airport’s ambitious plan to improve its food offering.

Sydney international airport now includes The Bistro by Wolfgang Puck and PappaRich restaurants.

Meanwhile, celebrity chef Luke Mangan is serving oysters, sashimi and champagne at T3.

“We aim to offer a unique experience that will leave a lasting impression on both locals and international travellers,” Terzini said. “We’re not just opening a venue, we’re bringing a slice of Sydney’s heart to the airport.”
