Celebrity Chef Pete Evans Makes Guests Hungry for Cuisine
Television chef, author and judge from My Kitchen Rules Pete Evans will be cooking up a winter storm at Cuisine Restaurant at Lake Crackenback Resort & Spa on Saturday July 7th.
With Cuisine’s Executive Chef Greg Pieper by his side, the menu for this special dinner will feature some of the Snowy Mountain region’s finest winter produce and will be matched with wines from the Margaret River’s Voyager Estate. Accommodation is available from $167.50 per person per night in a gold mountain-view studio (twin share) including daily hot breakfast for a minimum two night stay.
Both chefs, Pete Evans and Greg Pieper, share a healthy philosophy on food and that it should feature the freshest ingredients of the region and the season. The menu for the four-course July 7th dinner captures that.
The evening starts with a selection of Snowy Mountain inspired canapés matched with Voyager Estate 2011 Chenin Blanc. The canapés, which are primarily gluten free, include pork cheek with scallop and apple, sweet corn soup with local yabbies and smoked local rainbow trout salad on crispy wontons.
The entree features a master stock of local pork belly with black vinegar caramel with a vegetarian option of asparagus with egg yolk ravioli and brown butter sauce. The wine is Voyager Estate 2011 Semillon Sauvignon Blanc.
Steamed barramundi on a sweet potato puree with lime and coconut sauce is the main course. Vegetarians can enjoy a three bean curry with silverbeet, quinoa and yoghurt matched with a Voyager Estate 2008 chardonnay.
Dessert is a chocolate biscuit pudding with avocado ice cream and honeycomb finished with a Voyager Estate 2010 Shiraz.

Greg Pieper is the Executive Chef at Cuisine on Lake Crackenback Restaurant & Bar.
