Truffle season starts early in ACT and NSW

A bout of frosts in south-east NSW and the ACT has meant that the truffle season has started earlier than expected.

The cold weather encourages the truffles to fruit and mature.

Truffles at the Marshall's property in Reidsdale, in south-east NSW, are fruiting earlier than expected this year due to an ongoing bout of frosts.


Peter Marshall has been growing truffles at Reidsdale, in south-east NSW, for five years and he can't keep up with the demand for his truffles from overseas.

He says the French have started experimenting with summer dishes using Australian truffles.

"So fruit salad and truffles is a summer dish over in Paris nowadays," he said.

"It's really interesting how the truffles strike off with the sugar of fruits.

"We did persimmons the other day, laminated with very thin slices of truffles, and they were great."
