New Executive Chef at Park Hyatt Melbourne

Park Hyatt Melbourne is delighted to announce the appointment of Dane Clouston to the position of Executive Chef. New Zealand born Dane joins the luxury Melbourne hotel with a wealth of knowledge and experience having held prominent positions throughout Asia.Dane joins Park Hyatt Melbourne direct from the ground breaking PuLi Hotel and Spa in Shanghai where, under Dane's tenure as Executive Chef, the Jing'An Restaurant was cited as one of Shanghai's top restaurants by both International and national press.

His introduction from Melbourne into Asia began when he headed up as Executive Chef at Opia, in the Philippe Starck-designed boutique hotel, JIA Hong Kong. Opia won many accolades, including being named in the prestigious Conde Nast 'Hot tables' annual list and was touted as one of Hong Kong's top dining rooms by Harper's Bazaar, South China Morning Post, Tatler and Zagat.

Passionate about real food served simply, Dane says his philosophy and approach to his cuisine at Park Hyatt Melbourne will be to "excite the mind and pique curiosity". His menus created exclusively for the hotel will reflect the region's seasonal produce and influences to create a series of surprises to the palate
