St Kilda’s Prince Public Bar to reopen in December

The final stage of The Prince Hotel’s redevelopment will be completed this December when its Public Bar opens.

Executive chef Dan Hawkins and head chef Dan Cooper have created a menu centred on classic pub counter meals along with daily changing rotisseries offering the Prince Signature Roast series.

Little Prince Wine will be introduced in February 2020, specialising in boutique and premium wines, with a particularly focus on Burgundy. Bottles will be available for purchase to takeaway or taste on-site in the wine bar or underground cellar. An in-store deli will supply a limited selection of pre-prepared meals.

IF Architecture’s Iva Foschia has overseen the new look which pays homage to the bar’s Art Deco heritage.

The entire ground floor has been opened up, with a long oval front bar reinstated to its original location, alongside an expanded kitchen and spacious dining areas. An internal staircase has also been reintroduced, connecting the bar directly through to the Hotel Lobby and Prince Dining Room.
