Scott Pickett to open new restaurant in 5-star Hotel Chadstone

Scott Pickett is set to open a new flagship restaurant at the soon to open Hotel Chadstone Melbourne.

The $130 million hotel under Accor’s MGallery by Sofitel banner marks the first 5-star hotel out the Melbourne CBD.

Pastore is based on a wood-fuelled Italian brasserie with cooking done over coals, in a Josper oven, a firepit, a rotisserie and a smoker – but there won’t be a pizza oven. There will also be handmade pasta, grilled fish and large cuts of meat on the menu.

Pickett said they didn’t want to replicate either of their two other opening, Matilda and Lupo, but still “liked both of those styles”.

Pastore will be led by Pickett and former Thirty Eight Chairs chef Mirco Speri with dishes such as wood-roasted king prawn with fermented tomato, ‘nduja and fennel pollen and 35-day dry-aged Bistecca alla Fiorentina.

The bar and dining room will have room for 50 guests each. Pastore will open at Hotel Chadstone on November 1.
