Cairns latest 5-star hotel Bailey appoints culinary team

Crystalbrook Collection’s latest 5-star hotel for Cairns is finishing off preparations ahead of November opening.

The sister property to Riley will open on November 2, with a strong focus on sustainability and art.

Some of the key food and beverage positions have been filled with

Myles Minter has been appointed F&B outlet manager; Tyrone Hunt has been promoted from Riley to become executive chef; Matthew Larter has returned to Australia to take up the role of CC’s Bar and Grill chef de cuisine alongside Ignacio Perez from Chile. Mark Sinclair has been appointed CC’s Bar and Grill restaurant manager.

“The sustainability focus which was started in Riley will have a really strong flow-on through Bailey,” general manager Carl Taranto told the Cairns Post. “We will still have Carton & Co water, recycled timber but the difference between the two will be guests will be able to smell, touch, feel the luxury and the hotel will celebrate the arts in all its different forms.

“There will be fantastic local artists featured throughout the hotel and everyone will soon be able to recognise those creatives who are living on their doorstep.

“Eventually we will grow it into an online gallery so guests can procure some of the sculptures and pieces we’ll be featuring here.”

The lobby will feature a four-storey high water feature cascading over the front of a glass-panelled lift and a vertical tropical garden, and a white and yellow gold-leaf mosaic wall.

Taranto said the hotel would celebrate art “in all its forms”

“We will have activations to allow the public to come in and attend events on the pool deck,” he said.

The pool sits on the level three mezzanine of the hotel and in the middle of a Latin fusion restaurant (due to open in December). The pool and the pool enclosure are for the exclusive use of guests, however the bar, and restaurant will naturally be open to public who are invited to lounge on the rooftop deck and celebrate with a variety of Latin inspired flavours.

“We will have activations to allow the public to come in and attend events on the pool deck, though,” Taranto said.

Bailey is now taking bookings.
