Former Tasmania winery head chef to reopen Twelve Stones restaurant

Former Stefano Lubiana Winery head chef Brendon Walter will open his own restaurant in Pontville next week.

Walter plans to reopen the Twelve Stones restaurant which closed its doors suddenly earlier this year.

The new restaurant, located in a 1874-built heritage-listed church, will offer a similar take to what he had been doing at Stefano Lubiana’s, with a focus on modern Australian cuisine with fresh, seasonal produce cooked simply.

“There is a lot of opportunity in this area,” he told The Mercury. “Brighton is one of the fastest growing areas in Tasmania with a new high school going in and 450 new houses in a couple of subdivisions.

“There’s only really the pub and one main cafe out this way so there’s a lot of potential now and into the future.”

The chef says he will source all the vegetables and meat from local growers and producers, with a wine list that’s 95 per cent Tasmanian. Tasmanian gin, whisky and beer will also be available.
