Merivale calls time on fine diner Est.

Sydney is set to lose another fine dining restaurant with Merivale announcing it will close the doors of Est. around Christmas.

The hatted restaurant opened almost two decades ago, with celebrated chef Peter Doyle setting the high standard it became known for before leaving a few years ago.

"We are replacing both lifts [at Establishment], which will take about four months, so it is a good time to do it,” Merivale boss Justin Hemmes told Gold Food.

“We'll do a big renovation [in the Est. space] and move the team over to the new mid-level opening at Coogee Pavilion.”

Hemmes says it's too early to say what the concept will be when it reopens possibly at the end of 2020.

The latest loss for Sydney’s top end dining scene follows a swathe of well known restaurants such as Bridge Room, Sepia, Gastro Park and Oscillate Wildly.
