Monty Koludrovic resigns from Icebergs

Executive chef Monty Koludrovic is set to leave his position at Bondi’s Icebergs Dining Room at the end of the year as he heads up to Byron.

Koludrovic’s resignation comes after six years, with the restaurant awarded two hats in the latest Good Food awards. He also oversees The Dolphin restaurant.

Speaking to Broadsheet, he says he feels “blessed to have grown into this place” but maintains it is the right time to move on.

Restaurateur Maurice Terzini says he will take his time finding a replacement for Koludrovic, as both restaurants have head chefs able to handle the transition.

Terzini says he is sad to lose “an incredible Australian chef” and has loved working with him.

“We're sad to lose him but excited for what's in store for him in the future,” he told Broadsheet.
