Crowne Plaza Hobart to feature three restaurants and rooftop bar

Crowne Plaza Hobart is set to open in March marking the third and final stage of the Icon Complex development.

InterContinental Hotels Group signed a management deal with owners the Kalis Group in 2015 to build the luxury hotel.

But construction of the 235-room hotel was delayed by over two years after a Hobart Rivulet wall collapsed and flooded the basement of the Myer store in Liverpool St.

Former Frogmore Creek chef John Churchill has been appointed as executive chef to lead the menu for two of the hotel’s three restaurants.

Rooftop bar Aura Lounge Bar is set to open in May.

“The food will be sourced from local suppliers that are dedicated to producing great quality ingredients,” an IHG spokeswoman told the Mercury.

Sustainability is key focus for the hotel, with organic waste to be dehydrated and composted, to fuel the rooftop gardens following a partnership with Macquarie Point’s edible garden precinct. Onsite native beehives will be used to pollinate the rooftop gardens.
