The irresistible vegan pizza recipe - creamy pumpkin topped with spinach, mushrooms and toasted macadamia - Letizza Bakery

Letizza vegan pizza bases are pre-baked as like their standard foodservice range, so you cook them exactly the same within 7-10 minutes, then they are ready for your customers.

The same great Letizza flavour throughout the base but still hand stretched, and vegan friendly!

 

 


RECIPE 


Spinach, Mushroom & Toasted Macadamia Pizza with Pumpkin Purée Base turned in with
Cannelloni Beans

 

Ingredients 

  • Letizza Vegan Pizza Base
    (this is based on 12” sized pizza base)
  • ½ Pumpkin
  • 1 tin of cannelloni beans
  • ⅓ Macadamia nuts
  • ½ cup of Mushrooms
  • ¼ cup of Vegan Fetta
    (if you don’t want this pizza to be vegan just use normal fetta)

Instructions

  1. Preheat oven to 270˚C
  2. Place your pizza base on a wooden board or pizza tray
  3. Grab your pumpkin and cannelloni beans, using a mixer blend together half of pumpkin and half a tin of cannelloni beans, season with salt and pepper.
    (This will make a base for about 4 pizzas)

    * we add cannelloni beans to our pumpkin to make the puree have a bit more consistency but this isn’t necessary if you don’t want to
  4. Once it’s a perfect paste consistency spread across your Letizza pizza base
  5. Leave about 1cm to the edge of your pizza base
  6. Place your pizza to the side
  7. Grab a saucepan to toast up about  of a cup of macadamia nuts
  8. In another sauce pan for about 5 minutes heat up some mushrooms in olive oil and salt and pepper
  9. Once you have finished cooking your macadamia nuts and mushrooms bring them back to your kitchen bench ready to top your pizza!
  10. Bring back your prepped sauced pizza base
  11. Grab a handful of spinach and sprinkle over the base
  12. Sprinkle your mushrooms over the base
  13. Place your pizza in the oven for 5-7 minutes
  14. Grab your vegan fetta & macadamia nuts and sprinkle them over the base ready to serve!
