Jacksons on George plans revealed

Hospitality giant Maurice Terzini has revealed plans for the soon-to-be reopened Jacksons on George, which has been closed since 2018.

The Icebergs restaurateur is bringing the once popular venue back to life and has announced the Bondi restaurant’s Steve Sinclair as the head chef at the new kitchen. Other than Icebergs, Sinclair has worked at Ireland’s top restaurants The Old Schoolhouse Inn and The Potted Hen and England’s Michelin-starred L’Enclume.

Terzini’s vision is to create “a great f*cking public bar. It’s going to be very Sydney. That’s my brief. I don’t want it to feel like New York. I’ll give it that bit of Terzini glamorous punk.”

Jacksons on George is set to open in spring and will feature three levels.

The ground floor will house the Public Bar and will offer a contemporary take on pub classics, like cotechino and mustard fruit sausage roll made with slow cooked duck sausage or a Morton Bay bug bun.

On level 2, Bistro George will offer a mix between a European and Australian dishes including Clam Casinos, a wagyu salt-crusted rib eye and a banoffee sundae. Once dinner is done, the bistro will transform into a late-night bar with live music and a supper menu.

An alfresco rooftop bar tops the experience.

“Rather than go out and buy all-star staff, I’ve always looked within. I’ve got good, hardworking, and talented people who work for me,” Terzini said of his staff and of Sinclair’s appointment.
