Next gen chefs go out on their own with three highly anticipated restaurants

A pop-up at the Blue Door restaurant in Surry Hills will be run by former Tetsuya’s head chef Josh Raine.

Raine will take over the venue while its owners take a month off for a well-earned holiday.The pop up will operate while Blue Door’s owners are away next month on holidays.

Raine spent six years at Tetsuya’s but had ambition to open his own venue. The pop-up is the first step to meeting that ambition.

This is a way of me testing the waters before jumping in,” Raine told Good Food of his four-week residency.

“The owners need a well-deserved short holiday, so this is the perfect opportunity to use someone else’s space.”

A Spot of Raine at Blue Door will open on Wednesday, July 3, and will feature a six-course degustation priced at $200.

Raine hopes this will lead to opening a pub-style eatery with a small fine diner attached.

Alex Cameron is another rising star making waves. Cameron has purchased the 23-year-old Wet Paint restaurant in Bronte after cutting his teeth as group general manager of hatted Sydney venues Franca and Parlar at Potts Point and Armorica in Surry Hills.

He has focused on a venue away from the city bustle.

“It isn’t an area with a lot going on, but the fact Wet Paint lasted 23 years is a good sign,” he told Good Food.

Cameron is aiming for an August launch of his restaurant Table Manners, which will include dishes such as brioche and spanner crab on the menu. He is also planning to incorporate a 12-seat bar where guests can slip in for a post-swim drink and a club sandwich.

Former Rockpool chef and culinary director Corey Costelloe is also getting in on the action.

Costelloe has opened 20 Chapel in Marrickville, where venture partner Dave Allison previously ran STIX Café. The existing site will keep launch costs down, but also provides lower entry costs.

The chef will use only the best produce, but also the best dinnerware having ordered steak knives hand-carved from Portuguese timber.

20 Chapel opened on Friday, June 21.
