Peter Doyle's new pub plan revealed

Sydney restaurateur Peter Doyle plans to open a new pub right next to the Fish Markets in Pyrmont, where he would be neighbours with a restaurant owned by his brother Michael.

Peter Doyle's company, 308 Industries Pty Ltd, recently applied to relocate the CBD hotel licence known as Coolabar Bar/Restaurant to an address specified as 50-60 Pyrmont Bridge Road, Pyrmont.

According to documents obtained by TheShout, the new pub would be across the carpark from the fish markets, a stone's throw away from brother Michael Doyle's restaurant, Doyle's at Sydney Fish Markets.

The new project comes just a few months after Peter Doyle sold the leasehold of Watsons Bay Hotel for close to $30 million.

Sibling Sharon Doyle, who works alongside Peter, told TheShout: "I can confirm that the application has been lodged and it's now in the hands of the ILGA."

Documents state that the venue would operate as a hotel, "with the sale of liquor as the primary purpose, however the focus on the operation will be on quality dining in a waterfront location with a family friendly environment".

The application says the 332-person capacity venue would occupy 775 square metres, featuring large outdoor terrace areas on the ground and first floors as well as a sports bar.

The pub would cater to shift workers and fish market visitors with proposed hours of operation of 5am to 11pm daily.

"The application is effectively the removal of an existing licence within the same local government area (LGA), so the net impact in terms of additional licences and supply of alcohol in the LGA is neutral," the proponents argue.

Public submissions on the project close March 24.
