RECIPE: Refresh the sides on your menu

Here’s an easy recipe to refresh the crispy potato offering on your menu, intrigue customers and stand out from your competition, using Wagyu Tallow.

Serve these bad boys as a side on your steak dish, or as an entrée on your menu in it’s own right. Nobody goes past a crispy potato option whether it’s wagyu fries, wedges or roast potatoes.

Method:

  1. Take your whole potatoes and place them into a braising dish or tray, submerged in tallow with garlic, herbs and aromats of choice.
  2. Bake in oven at 180 degrees for 20-30 mins or until tender.
  3. Remove from oven, set aside to cool.
  4. Plate up and watch your customers faces fill with delight.
    OPTIONAL: Make your Wagyu Fat Potatoes into EXTRA crunchy wedges!
  5. Once your potatoes are back to room temperature. Cut them in half and shallow fry or deep fry in tallow. Then, repeat step 4.
