Denmark’s best restaurant opens in Sydney

The Michelin starred Noma restaurant based in Copenhagen opened in Sydney today.
Fittingly, it’s on Australia Day - perfect timing for the restaurant that’s been ranked No 1 no less than four times on the world’s best 50 list.
And only a select few will get there.
They’re the ones who logged onto the Noma website back in October last year and made a reservation.
They will be in for a treat.

Head chef and founder René Redzepi and his 80-strong team, who have relocated from Denmark to run the antipodean Noma at Barangaroo, will be presenting the best Australian cuisine for the 5000 or so lucky diners, at $485 a meal, plus wine.
And don’t expect Danish food: it’s all bush tucker including crocodile fat, Arnhem Land live green ants, mud clams and magpie geese.

As for the wine list, it will be local wines and beers plus what they call a “short global wine list.”
And to comply with local food laws and service of alcohol, the entire Noma team went to TAFE Western Sydney to do a course in food safety and service of alcohol.
For Redzepii and his crew, it’s all a new adventure. Relocating to the other side of the world is one hell of a way to build a team.
As one would expect at the world’s best restaurant.
