Parlour Group to open Stanton & Co

Parlour Group will be opening a new eatery Stanton & Co in Rosebery in October.

The outfit behind venues such as Riley Street Garage, Surly’s and The Village Inn, say the area is perfect for the new dining destination.

“That whole area is just going to be booming in the next five years,” Parlour Group owner Brody Peterson told Broadsheet. “All of those old industrial areas are gentrifying at the moment pretty rapidly.”

Named after Richard Stanton, the property developer who transformed the area into an industrial suburb in the early 1900s, it will have a dining room, bar and an open kitchen.

The design draws its inspiration from the history of the site and New York’s Meatpacking District.

“We love unique buildings, this is an old heritage red-brick building with tons of natural light coming through. It’s got the high, big industrial ceilings with metal tresses. It’s stunning,”  Peterson said.

Executive chef Regan Porteous and head chef Marcelino Papio are still putting together the menu.

The aim there is to combine modern-Australian cuisine with Japanese flavours.

They are planning to have two fast and fresh a la carte lunch menus and a dinner menu.

And of course, there will be sharing plates.

There are plans for an extensive list of cocktails, wines and beers at the new venue.

There will also be craft beers. Diners can expect taps celebrating all the local breweries.

Peterson says the craft beers are an important part of the mix.

The good thing about our beer selection is we are not selling ourselves to one of the big beer brands,” Peterson said.

 “When you own your own taps you have flexibility to do whatever you want on them, so we can do beer of the month, we can change our taps every six weeks if we want to, and help all the little guys out.”
