Ballarat’s Provincial Hotel brought back to life

Ballarat’s Provincial Hotel has been given new lease of life, after a significant refurbishment of its 23 rooms and the addition of a European-inspired restaurant.

The 109-year-old building has been transformed under the ownership of husband and wife Simon and Gorgi Coghlan, and their business partner Drew Harry.

Each suite is unique, designed by Coghlan along with interior designer Kathryn Mills and interior stylist Genevieve Manley.

“It’s a real blend of respect, and a nod towards Victorian art and Victorian heritage,” Coghlan told Broadsheet. “There’s that feeling of being spoilt and feeling warmth and luxury … It’s like staying at a friend’s house, who just happens to be a really good stylist.”

The hotel’s new restaurant Lola is named after exotic dancer and actress Lola Montez, who visited the Goldfields in 1855. The European-inspired dishes have been created by head chef Shaun Thomson (ex-demi chef at Neil Perry’s Rockpool).

Local sommelier and winemaker Troy Walsh, and Paul Ghaie (Blackhearts & Sparrows) are in charge of the drinks list.
