New exec chef at Lizard Island

Lizard Island has appointed Mark Penna as executive chef overseeing the resort’s Saltwater Restaurant.

Penna honed his skills at some of Australia’s finest establishments including three years at Aria in Brisbane and a two-year stint at Darling Hotel at The Star Gold Coast.

In this new role, he will be in charge of curating a menu format that changes daily, ranging from seafood lunches to five course degustations.

Lizard Island executive director Greg Magi said he was confident Penna will be a valuable addition to the “island culture”.

“When you live and work on an island, your team become your friends and family, so we’re very selective with who we invite into the fold,” Magi said.
