Exec chef and award-winning bartender appointed to Hyde Paradiso

New Surfers Paradise venue Hyde Paradiso has announced its key staff members. 

The US lifestyle brand is making its Australian debut on the Gold Coast, with Australia’s most awarded bartender Tim Philips-Johansson looking after the drinks list and executive chef Joel Bryant in charge of the food offering.

Philips-Johansson, of Sweet&Chilli, has curated a creative drinks list which take the Italian Sgroppino and the Top of the Town Punch (serves 10) as its signatures, while Bryant, formerly of Oskars on Burleigh, will bring Greek, Turkish, Italian and Moroccan influences to the menu.

The new venue will feature a 12-metre bar, the Hyde Paradiso Sgroppino Room, which places a twist on the classic Venetian serve of sorbet, prosecco and limoncello, and the Hydeaway Sgroppino room, which can be used as a private dining room features a dedicated bartender serving a range of signature Sgroppinos.

Hyde Paradiso will open on April 1.
