US brand Hyde opens first Aussie venue at Surfers Paradise

Accor & sbe Entertainment Group’s new dining venue Hyde Paradiso has opened in Surfers Paradise.

The menu at Hyde Paradiso kicks off with a selection of traditional house made dips like hummus, smoked eggplant and Taramosolata all served with a choice of breads baked on sight daily.

Seafood, whole grains and vegetables are the focus on the small and medium share plate menu, where dishes like sumac, salt and pepper squid or kale and pecorino arancini are suited to casual grazing. For larger groups and festive occasions, the menu offers Portuguese chicken served with chickpea salad, or whole baked reef fish baked with roasted fennel.

“The Autumn menu is seasonal and local featuring a vibrant mix of Greek, Turkish, Moroccan, Lebanese and Italian cuisines,” said executive chef Joel F. Bryant.

“Each dish is inspired by my travels throughout Europe and the casual tapas style of service enjoyed in cities like Barcelona and Lisbon. Our food embraces the culture of social sharing, with fresh light dishes designed to complement sea views, while guests are sipping tasty cocktails and refreshing wines.”

The Hyde brand is known in the United States for its mix of premium hospitality and dedicated program of live music and celebrity DJs.
