WAGYUMAFIA brings its dedicated ramen dishes to Sydney

A ramen dedicated restaurant will open in Sydney this Thursday.

The restaurant marks the first WAGYUMAFIA to open in Sydney.

The WAGYUMAFIA brand operates seven restaurants internationally, with three member’s only restaurants in Tokyo, the first of which was opened in 2016.

It also operates the iconic Cutlet Sandwich shop in Tokyo.

WAGYUMAFIA Sydney will take over the site of Mashi No Mashi Sydney (which will relocate to The Star) and bring its signature wagyu flair to the harbour city.

"There's a way to look at wagyu: before WAGYUMAFIA and after WAGYUMAFIA," WAGYUMAFIA co-Founder Hisato Hamada told Concrete Playground.

"Before WAGYUMAFIA, wagyu — even for the Japanese — [was] considered a very expensive product. We wanted to bring wagyu to more people in more ways."

A range of traditional ramen dishes will be on offer, highlighted by the signature Wagyujiro ramen – made with 100% wagyu beef sourced from Japan's 20 best beef farmers.

One of those farmers is world-famous wagyu cultivator Muneharu Ozaki.

Preparation includes 24-hours in Ozaki beef bone stock, accompanied by bean sprouts, bamboo shoots and organic Japanese garlic.

"I want to make food to share with my wife, my family, my friends... somebody you love. I don't want to fake it. A lot of people nowadays make fake food. I make food for myself," Hamada says.

Each serving will be large and hearty to satisfy the hungriest of customers – each bowl weighing circa 1 kilogram.

Also on offer is Ozaki wagyu beef gyoza.

"I spent a number of my adolescent years living here in Sydney and I consider this city the birthplace of my appreciation for food," Hamada said.

"From fish market visits with my family to slurping ramen at King's Cross, Sydney gave me many great food memories so it is very exciting to return after nearly 30 years and open the first international Mashi No Mashi shop outside of Hong Kong and the first WAGYUMAFIA restaurant in the Southern Hemisphere."
